Ingredients
1 batch of gluten free pie crust, top and bottom layer: https://www.enliven.fit/recipe...
1lb ground pork, preferably pasture raised pork
1lb ground beef, preferably grass-fed beef
2 large potatoes
olive oil
1 clove of garlic minced
1 small onion finely chopped
1/2 tsp of poultry seasoning
1/2 tsp of cinnamon
1/4 tsp of cloves (I've used cardamom instead at times)
1/4 tsp of nutmeg
salt and pepper
1/2 cup of water
Instructions
1. Peel and chop potatoes, boil in hot water until soft
2. Mash potatoes with 1-2 TBSP of olive oil and set aside
3. Sauté the onion and garlic in olive oil and add the spices to this.
4. Add the ground beef and pork to the onion and garlic and spices mixture
5. Brown the meat until fully cooked.
6. Add the mashed potato to the meat mixture with 1/2 cup of water and stir until the meat mixture is well combined and a bit thick.
7. At this point I taste the meat and add more spice if necessary. I find I like more cinnamon, and more nutmeg and a little bit more of the poultry seasoning. I usually end up doubling the amount.
8. Roll out the pie crust between two pieces of parchment paper. Place the bottom crust in a glass pie plate.
9. Fill the pie with the meat filling and then place the top crust on top of the filling.
10. Seal well by pinching the edges together.
11. Brush the top of the crust with some olive oil and then bake at 350F for about 30 min.
12. I often brush olive oil on it mid bake and once more when I pull it out when it is finished.
