Best Banana Muffins ever!

Makes 2 1/2 to 3 dozen muffins 


12 ripe bananas 

12 pastured eggs

5 tsp of pure vanilla 

1/4 cup of coconut or olive oil or avocado oil 

5 1/4 cups of almond flour

1 1/2 cups of tapioca flour 

3 tsp of baking soda

1 1/2 tsp of baking powder 


Blend bananas, eggs, oil and vanilla in a food processor until the mixture is smooth and fluffy

Mix both flours, baking soda, and baking powder until well combined

Pour the wet batter into the dry and mix until smooth. Don't over mix! 

Let the batter rest for 5-10min before scooping into muffin cups 

Bake at 350F for 21-22min 

Remove the muffins from the oven and cool and enjoy!
