Almond Butter Cups

Ingredients 

Bottom layer: 

1/3 cup of almond butter 

2 1/2 TBPS melted coconut oil 

1 tsp vanilla 

3 TBSP of cocoa powder (try Cacao for extra nutrients!) 

2 TBSP of sweetener (monk fruit blend, honey or maple syrup) 

Top layer: 

1/3 cup of almond butter 

2 TBSP of melted coconut oil 

1 tsp of vanilla 

2 TBSP of sweetener (monk fruit blend, honey or maple syrup)

Instructions

1. Line a muffin tin with muffin liners

2. Combine all ingredients for the bottom layer and set aside

3. Combine ingredients for the top layer 

4. Fill half of the muffin cup with the chocolate bottom layer

5. Scoop the nut layer on top of the chocolate layer to fill the rest of the cup 

6. Shake the muffin tin when all the cups are filled to make the mixture even 

7. Freeze for 30 min and enjoy! 

8. These are best stored in the freezer
