Ingredients Topping: 2 cups of almond flour 1 cup of chopped up pecans (can use almonds or macadamias if you prefer) 1 cup of shredded unsweetened coconut 2-4 TBSP of maple syrup (adjust to your desired sweetness) 1/2 cup of coconut oil, melted 1 tsp of cinnamon (can add more spice if desired) 1/2 teaspoon of nutmeg 2 tsp of vanilla 1/4 tsp of salt Filling: 6-8 large apples, peeled (you can leave unpeeled as well for more nutrients) - can also use more apples or less if you desire. 2 TBSP of arrowroot powder 3 TBSP of lemon juice 1-2 tsp of cinnamon (optional) Instructions 1. In a large bowl, stir all of the topping ingredients in together and mix well until crumbly. Set aside. 2. Peel and core apples and chop into small cubes 3. Toss the apples with lemon juice 4. Sprinkle the arrowroot powder onto the apples and mix so that most apples have powder on them 5. Place the apple mixture at the bottom of a baking dish 6. Sprinkle the topping on top of the apple mixture and press down with a spoon so that the topping is packed in and smooth 7. Bake at 375 F for 45min 8. Bake with aluminum foil covering the top for the first 30 minutes (I put parchment in between the topping and the aluminum foil to protect the aluminum from leaching into my food). 9. Then remove the foil and let the topping brown for the last bit of time. 10. The cobbler is ready when the apples are soft and the topping is crisp and slightly browned. Adjust time and heat as needed.
