Ingredients
1 1/2 cups of almond flour (or any other nut flour - we tried pecans)
1 1/2 TBSP of Arrowroot or Tapioca Flour
1 1/4 tsp of baking powder
pinch of salt
4 large apples (we used 2 granny smith and 2 ambrosia)
3 large eggs
1/2 cup of sweetener (we used monk fruit sweetener, but you can use honey or maple syrup)
1 tsp of vanilla
6 TBSP of liquid coconut oil or olive oil
Optional: add spices that go well with apple desserts like cinnamon, ginger, nutmeg, cardamom
Instructions
1. Peel and slice apples and set aside (I forgot to peel them and it turned out just fine)
2. Combine the flours, baking powder and salt and mix.
3. In a separate bowl, beat the eggs and sweetener together
4. Then add the coconut oil and and vanilla and blend until smooth
5. Fold the liquid ingredients into the dry ingredients and gently stir and combine
6. Mix in the apples
7. Smooth out the batter into a cake pan (we used a round cake pan)
8. Bake at 350F for 50-65min (depending on how soft you like the apples) until the top is golden and apples are soft
9. Let it sit and cool and then enjoy!
10. Optional: serve with chilled coconut cream or a warm vanilla custard
