Ingredients
4 1/2 lbs of raw sweet potato
1 large onion
3-4 garlic cloves (or more to taste)
sea salt and pepper
olive oil
4 cups of green peas
2 cups of chopped up raw carrots
2-3 cups of chopped up raw broccoli
2 cups of shredded cabbage
3-4lbs of ground chicken (can use lamb or turkey or ground beef)
Instructions
1. peel and chop sweet potato
2. boil until soft, drain water and rinse
3. mash the sweet potatoes with 1 TBSP of olive oil and 1/3 cup of coconut milk (can add more of both until the mash is light and fluffy)
4. salt the sweet potato mash to taste, set aside
5. dice onion and mince garlic
6. lightly sauté onion and garlic in a frying pan
7. add the ground chicken to the pan and stir and cook until the meat is fully cooked, set aside
8. in a large casserole pan, layer your items in this order: ground chicken and onion and garlic on the bottom, sprinkle shredded cabbage on top and spread evenly, pour peas and carrots together as the next layer, then add some broccoli to the carrots.
9. salt and pepper the vegetables before you add the sweet potato mash for the final layer
10. spread the mash evenly and smooth out
11. Bake at 350F for 40-45 min or until the casserole is hot all the way through and the raw vegetables are soft (adjust time depending on your preference and oven)
