Ingredients
3/4 cup sweet potato puree
1 cup peanut or almond butter
1 tsp pure vanilla extract
1/4 cup + 2 TBSP almond flour
1/2 cup mini chocolate chips (sugar and dairy-free)
2/3 cup monk fruit sweetener - this was my original recommendation, I have since used coconut sugar or maple syrup and aim to use more like 1/3 cup of sweetener or a tiny bit more. I find this part very subjective so taste your batter and sweeten it to taste. The sweet potato adds some sweetness and you can top it off with a natural sweetener.
1/4 cup + 2 TBSP cocoa powder
1 1/2 tsp baking soda
1/8 tsp salt
Instructions
- Preheat the oven to 325F
- Line an 8-inch pan with parchment paper or grease well
- Gently heat your nut butter until easily stirred
- Then whisk it together with the sweet potato and vanilla extract in a large bowl
- In a separate bowl, stir together all remaining ingredients – make sure that baking soda is evenly incorporated by using a sifter
- Pour dry ingredients into wet (not the other way around), stirring until everything is smooth and transfer into the prepared pan.
- Bake on the centre oven rack for 30 minutes (It will look a little underdone, but firms up as it cools
