Soft Sweet Potato Cookies


2 cups of raw sweet potato, peeled and chopped into 1 cm cubes

⅔ cup of soft coconut oil 

⅔ cup of unsweetened applesauce

½ cup of coconut flour

½ cup of tapioca flour

2 TBSP of natural sweetener (monk fruit, honey or maple syrup) Note: this is optional! 

1 tsp of baking soda

2 tsp of cinnamon

1 tsp of nutmeg

½ tsp of ginger


  1. Preheat oven to 350F
  2. Mix all ingredients in a food processor
  3. Puree until smooth
  4. Line a baking sheet with parchment paper
  5. Drop the cookies onto the sheet using a spoon (cookies do not expand very much while baking) 
  6. Bake for 20-25 minutes (28 minutes seemed to work best in my oven) 
  7. Cool and enjoy! (These cookies taste even better when put in the fridge to harden a bit)
