Soft Sweet Potato Cookies

Soft Sweet Potato Cookies image -


2 cups of raw sweet potato, peeled and chopped into 1cm cubes

⅔ cup of soft coconut oil 

⅔ cup of unsweetened applesauce

½ cup of coconut flour

½ cup of tapioca flour

2 TBSP of natural sweetener (monk fruit, honey or maple syrup) this is optional! 

1 tsp of baking soda

2 tsp of cinnamon

1 tsp of nutmeg

½ tsp of ginger


  1. Pre-heat oven to 350F
  2. Mix all ingredients in a food processor
  3. Puree until smooth
  4. Line a baking sheet with parchment paper and drop the cookies on the sheet using a spoon (cookies do not expand very much while baking) 
  5. Bake for 20-25 min (28min seemed to work best in my oven) 
  6. Cool and enjoy! (These cookies taste even better when put in the fridge to harden a bit)
