Snowballs
Ingredients:
1 cup of almond butter
½ cup of almond flour
2-3 TBSP of maple syrup (optional)
1 ½ TBSP of vanilla
¼ cup of shredded coconut
½ cup of chopped raisins, dates, nuts, seeds (whatever combination you prefer)
Instructions:
- Combine the almond butter, almond flour, vanilla and sweetener and mix well
- Stir in the shredded coconut and chopped nuts and dried fruit
- Form little balls from the mixture and shape until smooth and soft
- Roll each ball in a bit of shredded coconut to coat the exterior
- Place each ball on parchment paper on a baking sheet or tray
- Eat right away for a soft snowball or put in the fridge for a firmer and crunchier treat
- Feel free to experiment with different kinds of nut butter and combinations of dried fruit and nuts
