Quinoa Breakfast Bake


2 bananas

1 1/2 cups of uncooked organic quinoa

2 TBSP of chia seeds 

2 cups of macadamia nut milk (or other nut milk) 

2 TBSP of hemp hearts 

6 TBSP of shredded coconut (organic and unsweetened) 

1/2 cup of organic medjool dates 

2 tsp of pure vanilla 


1. Mix the quinoa, chia seeds, shredded coconut, and hemp hearts together in a bowl until combined 

2. Combine the milk, bananas, and vanilla in a food processor and blend until smooth 

3. Chops the dates into small pieces and set aside

4. Combine the wet and dry ingredients and stir until well mixed.

5. Add the dates to the batter

6. Pour into a 7x11 in pan that is lined with unbleached parchment paper 

7. Bake at 350F for 45min 

8. Try other variations like: adding fresh fruit, other dried fruit, flax seed, 1-2 eggs to increase protein
