Ingredients
Crust
2 cups of almond flour
¼ tsp salt
⅓ cup of solid coconut oil
1 egg beaten
Filling
2 cups of pumpkin puree
2 eggs
½ cup of coconut milk
⅓ c of monk fruit sweetener or maple syrup
2 TBSP of almond butter
¼ tsp of salt
2 tsp of cinnamon
½ tsp of nutmeg
½ tsp of ginger
¼ tsp of cardamom
Preparation
Crust
- Blend the flour and salt together
- Cut in the oil, using two butter knives until the pastry is crumbly
- Beat the egg and add it to the flour mixture and combine into a ball
- Place a piece of parchment paper on the pie plate
- Delicately press the crust with a spoon onto the pie plate and gently spread around until the surface of the pie plate is completely covered
Filling:
- Blend all ingredients together until smooth
- Pour filling into the pie crust and spread evenly
- Bake at 350F for 45-55 minutes until the crust is a golden brown
