Pumpkin Pie



2 cups of almond flour

¼ tsp salt

⅓ cup of solid coconut oil

1 egg beaten


2 cups of pumpkin puree

2 eggs

½ cup of coconut milk 

⅓ c of monk fruit sweetener or maple syrup

2 TBSP of almond butter

¼ tsp of salt

2 tsp of cinnamon 

½ tsp of nutmeg

½ tsp of ginger 

¼ tsp of cardamom



  1. Blend the flour and salt together
  2. Cut in the oil, using two butter knives until the pastry is crumbly
  3. Beat the egg and add it to the flour mixture and combine into a ball
  4. Place a piece of parchment paper on the pie plate
  5. Delicately press the crust with a spoon onto the pie plate and gently spread around until the surface of the pie plate is completely covered


  1. Blend all ingredients together until smooth
  2. Pour filling into the pie crust and spread evenly
  3. Bake at 350F for 45-55 minutes until the crust is a golden brown
