Ingredients
4 medium sized pastured chicken breasts
125g of raw organic pecans
organic olive oil
sea salt
herbs and spices to taste
Instructions
1. Cut up chicken breast in to bite-sized pieces or strips
2. Pulse pecans in a food processor until smooth
3. Pour pecans into a bowl and add salt and seasoning to taste, mix until well blended
4. Pour olive oil into a dish that can easily fit the size of the chicken strips
5. Take a chicken strip or piece, gently coat it in the olive oil
6. Then coat the chicken in the pecan crumb mixture
7. Place on a baking sheet that is lined with parchment paper
8. Repeat until all of the chicken pieces are coated
9. Bake at 375F for 30-45 min (until chicken is cooked through )
