Makes approximately 3 dozen muffins
Ingredients
4 1/2 cups of Cassava Flour
9 Bananas
1/4 cup of maple syrup (optional)
6 TBSP of olive oil
6 tsp of vanilla
3 tsp of baking soda
9 eggs
1 1/2 cups of canned full fat coconut milk
Instructions
1. Combine the cassava flour and baking soda until blended
2. Using a food processor, purée the bananas until very smooth
3. Add the eggs and olive oil, to your food processor and continue to blend until well combined
4. Remove the mixture from the processor and pour it into a separate bowl
5. Add the vanilla and maple syrup to the wet ingredients as well as the coconut milk
6. Mix until well combined
7. Pour the wet ingredients into the dry ingredients and gently stir until well mixed.
8. Bake at 350F for 22-24 minutes
9. Cool and enjoy!
