Ingredients 1 1/2 cups of almond flour 3 1/2 cups of tapioca flour 2 TBSP of baking powder 1 TBSP of vinegar 3 eggs 2 TBSP extra virgin olive oil 1/2 to 3/4 cup of water for use in the pot of boiling water only: 1 TBSP of maple syrup 1 tsp of sea salt Instructions: 1. Mix dry ingredients and blend well 2. In a separate bowl, mix wet ingredients 3. Add the wet ingredients to the dry ingredients and combine until a dough is formed 4. The dough should stick together but be very stiff (if the dough is too soft, it will not boil properly - if it does not stick together, add a little bit more water) 5. Place the dough in the fridge to chill for 10-15 minutes 6. Bring a large pot of water to boil 7. Add the sea salt and maple syrup to the water 8. Remove the dough from the fridge and form 12 disc shaped balls 9. Poke a hole in the middle to give it the 'bagel' look 10. Depending on the size of your pot, place 3-4 of the bagels at a time into the water to boil 11. Remove the bagels gently when they float to the top of the pot 12. Place them on a baking sheet (preferably on parchment paper) 13. You can bake them plain or brush them with egg wash and add any toppings that you would like. We enjoy cinnamon raisin and sesame seed. 14. When all of the bagels have been boiled, bake at 375F for 25min (may need to adjust time) or until they are slightly golden. 15. Enjoy!
