Ingredients 1/4 cup of olive oil 2 large onions, chopped 6 large carrots 8-12 cups of water and/or stock 4 cups of lentils 3, 400ml cans of stewed tomatoes 1 cup of red wine 5 cloves of garlic 1 tsp of maple syrup or monk fruit (to cut the acidity of the tomatoes) 1 tsp of thyme (I used fresh thyme) 1 tsp of marjoram (I like this spice and ended up putting in more to taste) salt and pepper to taste Extra ingredients: I have added the following sometimes to enhance flavor and add nutrients, however this recipe is very delicious on it's own: green peppers, sweet potato, celery. Instructions 1. sautée garlic and onion in the olive oil with thyme and marjoram 2. add the rest of the ingredients to a large soup pot 3. bring to a boil and then let it simmer and bubble on medium heat 4. it usually takes 40min or so to simmer and thicken 5. the stew is ready when the lentils are soft 6. season to taste!
