Makes approximately 30 muffins Ingredients 3 green apples, chopped into small pieces 1 1/2 cups of pecans, chopped or ground up in a food processor 1/2 cup of pumpkin seeds, ground up in a food processor 1/2 cup of fresh ground flax seed (or sometimes I use the same amount of hemp hearts) 1/2 cup of shredded coconut 4 cups of almond flour 3 cups of tapioca flour 2 tsp of baking soda 3 tsp of baking powder 3 tsp of cinnamon (or more if you'd like) 3/4 cup of chopped medjool dates 4 pastured eggs 2 cups of unsweetened apple sauce 2 bananas puréed 2 tsp of pure vanilla Instructions 1. Combine the tapioca flour, almond, flour, baking soda and baking powder and mix until smooth. 2. Add in the ground flax, pumpkin seed, pecans, dates and shredded coconut. Stir until well mixed. 3. In a separate bowl, mix the apple sauce, eggs, vanilla and banana purée together until smooth. 4. Add the wet ingredients to the dry ingredients and stir until combined. 5.
