This recipe makes two single pie crust shells.
Ingredients
1 3/4 cups of Otto's Cassava flour
1/2 cup of arrowroot starch
1/2 tsp of salt
2 eggs, whisked
2/3 cups of coconut oil (I usually chill this if I have the time)
4 TBSP (approximately) of organic extra virgin olive oil
5 TBSP of cold filtered water
Instructions
1. Whisk flours and salt together until well combined
2. Add the coconut oil to the flour and use a pastry knife or your hands to crumble the oil into the flour. When it is well mixed, the flour should feel crumbly.
3. Next add the whisked eggs, water and olive oil to the flour mixture.
4. First, mix with a spoon and then use your hands to turn mixture into dough.
5. I find that this dough can be dry, so feel free to add more olive oil to the dough so that it is the right texture. Oil or water will help this dough stick if you find it crumbly.
6. I typically follow the amounts above for olive oil and then drizlle on more as I'm working with it and getting ready to roll it out.
7. This dough works best if rolled between two sheets of parchment paper.
8. Bake at 350F for 30 min approx. with whatever sweet or savory filling you choose!
