Ingredients
Base
Riced cauliflower and shredded cabbage
Toppings
(Note: add some or all of these toppings or whatever else you have in your fridge or cupboard)
Shredded carrot and/or zucchini
Chopped green apple
Diced up nuts
Avocado slices
Cucumber
Preparation
- Rice cauliflower using a food processor (Note: We use 1 head of cauliflower and two cups of greens for extra nutrients)
- Sauté in a pan with some coconut oil
- Shred cabbage in the food processor
- Fry up the shredded cabbage until soft and a bit crispy
- Fry up ground chicken or pork (feel free to season to taste and add onion and garlic if you’d like)
- Layer the first three in the bowl this way: rice on the bottom, cabbage next, and then meat on top
- Then add toppings and sauce to complete the bowl
