Coconut Flour Pancakes


1/2 cup of coconut flour

4 TBSP of olive oil

½ cup of applesauce

6 eggs

2 tsp of baking powder

1 tsp of vanilla

1/4 tsp of sea salt



  1. Combine dry ingredients in large bowl
  2. Combine wet ingredients in separate bowl
  3. Pour the wet into the dry 
  4. Cook the pancakes like you would a wheat flour pancake
  5. Flip when little bubbles form in the batter (Note: If using a cast iron pan, you'll need to keep the pan wet with oil in order for it to flip smoothly)
  6. Enjoy!
