Coconut Flour Banana Muffins

Yeilds 2 dozen

Ingredients

8 medium overripe bananas

4 eggs, large

1 cup almond butter

2 tsp pure vanilla extract

4 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1/4 tsp salt

1 cup coconut flour

Preparation

  1. Preheat the oven to 350F 
  2. Line muffin tins with paper cups
  3. In a large bowl, mash bananas with a fork or masher
  4. Push to one side, add eggs and whisk with a fork
  5. Add almond butter, vanilla, baking powder, baking soda, cinnamon and salt, stirring to combine
  6. Add coconut flour and mix well
  7. Pour batter into the lined muffin tins and bake for 20 minutes or until a toothpick inserted in the middle comes out clean
  8. Remove from the oven and let cool for 15 minutes. 
  9. Enjoy!
