Ingredients
8 medium overripe bananas
4 eggs, large
1 cup almond butter
2 tsp pure vanilla extract
4 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 cup coconut flour
Preparation
- Preheat the oven to 350F
- Line muffin tins with paper cups
- In a large bowl, mash bananas with a fork or masher
- Push to one side, add eggs and whisk with a fork
- Add almond butter, vanilla, baking powder, baking soda, cinnamon and salt, stirring to combine
- Add coconut flour and mix well
- Pour batter into the lined muffin tins and bake for 20 minutes or until a toothpick inserted in the middle comes out clean
- Remove from the oven and let cool for 15 minutes.
