Coconut Date Cookies

Ingredients 

2 cups of medjool dates, pitted 

2 cups of unsweetened shredded coconut

1 cup of raw pecans 

1/2 tsp of ginger

1/4 tsp nutmeg

1/8 tsp of sea salt 

1 egg

Instructions

1. Combine all of the ingredients except for the egg into a food processor and blend well. 

2. Add the egg to the mix and blend until the dough sticks together. 

3. Place parchment paper onto stainless steel cookie sheets 

4. Make little balls of dough with your hands and flatten them into a cookie. 

5. These cookies don't rise, so you can place them close together

6. Bake at 350 F for 12 min for soft cookies and 15min for crispy cookies

7. I'm going to keep experimenting with adding spice like more ginger, cloves and nutmeg as well as adding more pecans. See what tastes good to you!
