Ingredients 1/3 cup of almond butter 2 1/2 TBPS melted coconut oil 1 tsp vanilla 3 TBSP of cocoa powder (try Cacao for extra nutrients!) 2 TBSP of sweetener (monk fruit blend, honey or maple syrup) 2 TBSP of puffed quinoa or puffed rice 2 TBSP of raisins chopped up 2 TBSP of shredded coconut (feel free to add more of the quinoa, raisins and shredded coconut if you like a crunchier piece of chocolate) Instructions 1. Melt the coconut oil and set aside to cool just a bit 2. Combine the roasted almond butter with the coconut oil and blend until smooth 3. Add the vanilla and cocoa powder and sweetener and mix until smooth 4. Now add your puffed quinoa, raisins and shredded coconut mix until well combined 5. Scoop the mixture into a mini muffin tin pan with muffin liner cups 6. Place the muffin pan in the freezer for 20min to let the chocolate set 7. Remove from the freezer and let it come to room temperature or enjoy a piece cold! 8. These chocolate cups store best in the freezer 9. Enjoy!
