Chicken Stew

Ingredients

3-4 cups of leftover roasted chicken (can use fresh chicken and either roast or stir fry it before adding to the stew) 

1 can of pure full fat coconut milk (no guar gum or other additives) 

5-6 cups of fresh chicken stock or vegetable stock or water 

2 TBSP of Tapioca Flour mixed into 1/4 cup of water 

1 cup dry white wine (can add more or less) 

2 stalks of celery 

2 small onions, diced 

4-6 garlic cloves (can add more or less) 

garlic powder

fresh rosemary 

thyme (fresh or dried) 

3-4 medium sized potato (can use purple or sweet potato for extra nutrients) 

4-6 medium sized carrots 

1 cup of frozen peas 

2-4 cups of chopped cauliflower 

Instructions 

1. If you don't have some leftover roasted or cooked chicken, stirfry some chicken breast and chicken thighs in olive oil with lots of salt and pepper. Cook until tender and not rubbery and then set aside.

2. Sautée onion, celery and garlic in 2 TBSP of olive oil. Add thyme and salt and pepper to the sautéeing vegetables. Sautée for approximately 3 minutes.  

3. Chop the carrots and potatoes into small to medium sized chunks and add to the pot with the other vegetables. Stir and lightly cook for another 3-4 minutes. Feel free to add more root vegetables at this point, but nothing that will over cook. We'll save the peas and the cauliflower for the end. 

4. Add the chicken, thyme and rosemary to the pot. 

5. Add water or stock (you just want this to cover the vegetables)

6. Add the wine to the pot (feel free to add more or less or skip this step) 

7. Add the coconut milk (make sure that you cream the coconut milk with an immersion blender before you add to the stew so that it is smooth) 

7. Bring the stew to a boil and then let the chicken and vegetables and seasonings simmer for 30-40min

8. Taste your stew and adjust the seasoning to your taste. At this point I usually add additional garlic powder, salt and pepper and thyme and season it to my taste. 

9. Combine your tapioca flour with water and mix until smooth 

10. Add the flour and water mixture to the stew and let it simmer for an additional 20-30 minutes. Feel free to add more if you prefer a thicker consistency for your stew. 

11. Taste the stew again and make any seasoning adjustments. 

12. For the last 5-10 minutes before you are ready to serve, add the peas and cauliflower. This will ensure that they are soft but not overcooked.
