Cassava Flour Tortillas

12 tortillas 

Ingredients: 

1 ½ cup of Otto’s Cassava Flour

1 ½ cups of boiling hot water

3 ½ TBSP of good quality olive oil 

¼ tsp of salt 

Preparation:

  1. Combine flour and salt and mix well
  2. Add boiling hot water and olive oil  to the flour and stir until combined
  3. Stir with a spoon until dough is sticky
  4. Then use your hands to mix the dough and knead until it is soft and smooth. The dough should be warm, slightly oily and soft. 
  5. Either make 12 little balls or pinch off one piece at a time
  6. When handling the dough, don’t let it dry out. Oil your hands with olive oil to help keep the moisture in. 
  7. Roll with a rolling pin in between two pieces of parchment paper
  8. Heat a cast iron skillet on medium heat, gently oil 
  9. Place tortilla on the skillet and let it cook for approximately 1 ½ min (this will vary depending on the type of pan you use and the heat of your stove 
  10. Flip and cook on the other side for about the same amount of time
  11. I cook these a bit less for softer tortillas and bit longer for crispy tortillas
  12. These store well in the fridge or freezer. Enjoy!
