
Cassava Flour Tortillas
12 tortillas
Ingredients:
1 ½ cup of Otto’s Cassava Flour
1 ½ cups of boiling hot water
3 ½ TBSP of good quality olive oil
¼ tsp of salt
Preparation:
- Combine flour and salt and mix well
- Add boiling hot water and olive oil to the flour and stir until combined
- Stir with a spoon until dough is sticky
- Then use your hands to mix the dough and knead until it is soft and smooth. The dough should be warm, slightly oily and soft.
- Either make 12 little balls or pinch off one piece at a time
- When handling the dough, don’t let it dry out. Oil your hands with olive oil to help keep the moisture in.
- Roll with a rolling pin in between two pieces of parchment paper
- Heat a cast iron skillet on medium heat, gently oil
- Place tortilla on the skillet and let it cook for approximately 1 ½ min (this will vary depending on the type of pan you use and the heat of your stove
- Flip and cook on the other side for about the same amount of time
- I cook these a bit less for softer tortillas and bit longer for crispy tortillas
- These store well in the fridge or freezer. Enjoy!
