Breakfast Patties

Ingredients 

1 lb of ground chicken or turkey (I've used ground pork as well) 

1/2 cups of crushed crackers (I use gluten-free Simple Mills Crackers) 

1 egg (can use a flax egg if you don't tolerate eggs) 

2 TBSP of minced onions 

1 clove of minced garlic 

1/2 tsp of salt 

1/2 tsp of garlic powder 

1/4 tsp of black pepper 

1/4 cup of cassava flour 

optional add-ins:

rosemary, paprika or other seasonings that you would enjoy! 

fresh ground flax

1-2 tsp of maple syrup for a sweeter flavor

a shredded apple for sweetness 

some greens like arugula or broccoli sprouts for extra nutrition 

Instructions:

I use the basic recipe above and then tailor it to my tastes and the type of breakfast pattie I'm trying to make. 

1. Combine all of the ingredients in a bowl and mix thoroughly. 

2. Shape either small burger patties or meat balls.

3. Fry them in a pan or bake in the oven - ensure that the pattie is cooked through before it is considered done. 

4. Make sure to taste a bit of the cooked meat to see if you like the taste. Adjust the seasoning to taste!
