This recipe makes 24 muffins Ingredients 4 cups of almond flour 2 cups of tapioca flour 2 tsp of baking soda 3 tsp of baking powder 3 cups of blueberries 4 eggs 1/2 cup of coconut milk 1 1/2 - 2 cups of apple sauce (unsweetened) 3 tsp of vanilla lemon zest (optional) *we like our blueberry muffins less sweet, you might find you want to add a little bit of honey or monkfruit sweetener or maple syrup to this recipe* Instructions: 1. Combine all dry ingredients and blend well together. 2. Combine eggs, apple sauce, coconut milk, vanilla and mix with an immersion blender or in a food processor until very smooth. 3. Slowly mix the wet ingredients into the dry ingredients and stir until combined. 4. Then, add the blueberries and lemon zest to the mixture and stir gently until combined. 5.
