Ingredients:
Topping:
2 cups of Oats
1 Cup of Oat flour
2/3 cups of coconut sugar
1/2 cup of chopped pecans
1/2 tsp of cinnamon
1/2 cup of coconut oil
1/2 tsp of salt
1/2 TBSP of lemon juice
Filling
8 cups of Saskatoons (or other berries or fruit)
4 TBSP of arrow root starch
6 TBSP of lemon juice
1/4 cup of maple syrup
Instructions
1. Assemble the topping by mixing all of the ingredients together. Works best with cold coconut oil (or grassfed butter if you prefer)
2. When the topping is well mixed and crumbly, let it chill in the fridge while you make the rest.
3. Combine all of the filing ingredients in a bowl and mix well together.
4. Pour the filling into a large casserole dish and top with crumble
5. Press crumble down a bit with a spoon
6. Cover for the first 30min or so (I use parchement paper for a non toxic option)
7. Remove the cover for the last 10-12 minutes to crisp up the topping
8. Bake at 350F for 35-45min
