Mango Ice Cream


Ingredients

make 4 small servings

4 cups of frozen mango 

1 cup of coconut cream (can use milk, but cream makes for a creamier texture) 

1/2 tsp of vanilla 

optional sweetener: We find that the mango is sweet enough, but if you prefer your treat a little sweeter or your mango isn't as ripe, add some stevia, monk fruit, honey or maple syrup. Just try a tiny bit as a time keeping in mind that nature's sweet in fruit is usually all that we need) 

Instructions

1. Blend the mango in a food processor first

2. Then add the liquid

3. Use your pulse option for the second blend as you don't want to over blend it. When it seems like it's the right kind of ice cream texture, you can stop blending and remove it from the food processor.

4. Enjoy immediately or place in the freezer to enjoy later. If you do put it in the freezer, it will harder a bit, so take it out 10 min or so before you want to eat it should you choose to freeze it right away. It's best when enjoyed right after you finish blending it.
