Makes approximately 2 dz muffins
Ingredients
Dry ingredients:
4 cups of almond flour
1/2 cup of fresh ground flax seed
4 tsp of baking powder
1 tsp baking soda
1 tsp of cinnamon
1/4 tsp of nutmeg
1/2 tsp of sea salt
Wet ingredients:
6 pastured eggs
1 cup of unsweetened apple sauce
1/2 cup of melted coconut oil
2-4 TBSP of maple syrup or honey (I always do this to taste as we like our muffins less sweet)
2 tsp of pure vanilla
3 cups of grated carrots
optional: chopped dates, walnuts and raisins
Instructions
1. Combine the dry ingredients in a large bowl and mix well
2. Combine eggs, apple sauce, coconut oil, maple syrup and vanilla and blend until smooth.
3. Add the carrots and raisins or other add-ins to the wet mixture and stir until well combined.
4. Add the wet mixture to the dry ingredients and gently combine
5. Bake the muffins at 350F for approximately 20min
6. Cool and enjoy!
