Ingredients:
3/4 cup of coconut oil, softened
3 pastured eggs
2 tsp of pure vanilla
1/4 cup of maple syrup (this amount of sweetener keeps the sugar very low for this cookie, but test and adjust to your tastes)
1 1/2 tsp of baking soda
3 cups of almond flour
3 cups of sprouted organic oats
1 cup of organic raisins
Instructions:
1. Cream the oil, eggs, maple syrup and vanilla together until smooth
2. Mix the flour, oats and baking soda together until well combined
3. Add the wet ingredients to the flour mixture and mix until well combined
4. Add the raisins to the cookie dough, gently stirring in (could add pecans or pumpkin seeds or sugar-free chocolate chips to add variety here)
5. Bake at 350F for 10-12 min (judge the baking time based on your oven. Mine seemed to take aprox. 11 min. Cookies are done when they are lightly golden on the bottoms.
Should yield aprox. 3 dozen cookies
