Gingerbread

Ingredients 

3 1/2 cups of almond flour 

1/2 cup of tapioca flour 

5 tsp of ginger 

2 tsp of cinnamon 

1/2 tsp of baking powder 

4 -5 TBSP of melted coconut oil (might need more oil if your flour is drier) 

1/4 cup of coconut sugar (sweeten to taste - we like ours more spicy than sweet) 

3 TBSP of molasses 

Instructions 

1. Combine the tapioca and almond flour in a large bowl 

2. Add the spices and baking powder

3. In a separate bowl, mix the melted coconut oil, molasses and coconut sugar together until well mixed.

4. Create a well in the dry mixture and pour the wet mixture into it. 

5. Gently stir the batter until well combined

6. Taste the batter for sweet and spice. Adjust accordingly. 

7. This cookie dough can be molded into little round cookies or you can use cookie cutters. The dough doesn't expand too much when it is baked. 

8. Bake at 350F, our baking time was approximately 11 minutes
