Ingredients
1 large head of broccoli, washed and chopped into small chunks
1/2 of a small red onion, diced very finely
1 large carrot, shredded
1/2 of a green apple, chopped
1 cup of arugula, cut up into smaller pieces
1/4 cup of pecans
1/4 cup of pumpkin seeds
1/4 cup of raisins or chopped up dates
Dressing
1/3 - 1/2 cup of olive oil
1/4 cup of lemon juice
1 tsp of salt
1 tsp of garlic powder
1/2 tsp of black pepper
Instructions
1. Chop up all of the vegetables and toss them together to make the salad base
2. Add the pecans, raisins and pumpkin seeds to the salad and continue to toss to mix well
3. Mix the dressing ingredients together in a measuring cup
4. Pour the dressing over the salad and mix it in thoroughly
5. Enjoy!
Feel free to try other things like herbs, sugar and nitrate-free bacon, nutritional yeast, 1-2 tsp of mustard, vinegar - make it suit your taste buds!
