Zucchini Pizza

Serves two adult portions


2 large zucchini, sliced lengthwise

pizza meat (choose something that is not highly processed)

pizza sauce

Mozzarella and or Romano cheese (these are both a low fat/higher protein options)

peppers, onion, asparagus, cherry tomatoes, mushrooms and any other vegetable toppings

salt and pepper


  1. Place the zucchini strips on parchment paper. 
  2. Sprinkle salt and pepper on top of zucchini. 
  3. Put the following things on top of the zucchini in this order: pizza sauce, meat, toppings, salt and pepper, cheese.
  4. Bake at 425F for 8 minutes, then 2 minutes on broil for a total of 10 minutes (bake your pizza for fewer minutes if you prefer crunchier zucchini). 
  5. Enjoy!
