Serves two adult portions
2 large zucchini, sliced lengthwise
pizza meat (choose something that is not highly processed)
Mozzarella and or Romano cheese (these are both a low fat/higher protein options)
peppers, onion, asparagus, cherry tomatoes, mushrooms and any other vegetable toppings
salt and pepper
- Place the zucchini strips on parchment paper.
- Sprinkle salt and pepper on top of zucchini.
- Put the following things on top of the zucchini in this order: pizza sauce, meat, toppings, salt and pepper, cheese.
- Bake at 425F for 8 minutes, then 2 minutes on broil for a total of 10 minutes (bake your pizza for fewer minutes if you prefer crunchier zucchini).
